SAUVIGNON PUNCHEON BA WILD ALE w/ CHERRIES & WILDFLOWER HONEY
500L oak Sangiovese puncheon primary fermented mixed culture spelt saison with wild foraged Brettanomyces and wild foraged Lactobacillus in the puncheon for 14 months.
A secondary fermentation on Whole Balaton Cherries from Door County Wisconsin for 1 week in stainless steel. Raw Minnesota basswood honey was used for the priming sugar in the bottle. Bottle conditioned for 23 months before release.
The puncheon intensified aromas of roses while adding earthy rustic cherry tones to the base beer. We felt the whole Balaton cherries paired seamlessly with the earthy expressions of the wild yeast and tart characteristics of the Lactobacillus, coupled with the rustic cherry flavors of the Puncheon.
