The newly named Dolcita is star of the show in this month’s Fresh From release. A drinkable hazy pale with a deceptively complex hop character.
Rich with tropical stone fruit and sweet aromatics and celebrated for its expressive peach character, Dolcita offers layers of caramelised pineapple, caramel cream, and orange. Ads and the Old Flax Store team have paired this with modern American classics Bru-1 and El Dorado for a familiar pineapple and orange backbone.
We’ve added Bru-1 Spectrum, a liquid extract, on the first day of fermentation to lend some extra punch to the pineapple. Then at the end of fermentation we are going for a giant dose of Dolcita to bring it all back together.
